Banana Coconut Chia Pudding

I eat fairly healthy-salads, fresh fruits, etc. and have recently started to eat Acai bowls, alternative milk products and today I tried Chia! I was pretty skeptical that I would like it and had hoped to buy a smaller bag of the seeds but I am hooked!

My friend, Renee, recently started a lifestyle and fashion blog at She Blooms Violet. She was inspired by her mom to start her blog and I'm so glad she did! Renee is the mother of four, does the marketing for her husband's dental office and always finds the time to volunteer, teach Greek dance and is always fashionably dressed (she's one of my go to models!) . I had no idea she was an excellent cook as well!

She posted her Banana Coconut Chia Pudding last week and I couldn't wait to try it. I headed over to Trader Joe's to buy the ingredients and minutes later I had the beginnings of a new favorite food! It was really hard to wait the two hours for it to 'set' but it was worth it- light but creamy and to my surprise very sweet even though I used only a small about of Maple Syrup. I loved her suggestion of making it at night to have it as a great way to start my morning! Bravo Renee!
