Growing up as a child, I couldn’t help but shadow my parents while they were preparing wonderful Greek delicacies in our kitchen. My fascination with phyllo dough started at a very young age. (I believe I was 8 years old when I made my first spanakopita all by myself). After learning how to master phyllo and spanakopita, I then knew I had a passion for cooking. My parents watched me go through an intense year of pastry school. While I was in pastry school, I flew to Greece to complete my externship. I was a sous chef on the island of Skiathos. I worked very hard to get through the program and I succeeded. After graduation from Le Cordon Bleu, I gained the knowledge in four main cuisines; Japanese, Chinese, Greek, and Spanish. I just fulfilled one of my long awaited dreams of publishing my first Greek cookbook, Back To My Roots. Back To My Roots is now available in print and as a e-book through Amazon – Barnes &

The name Kouzounas originated from my sweet Yiayia, Stavroula Kouzouna Kalapothakou from Mani, Greece who was a fantastic home chef. I learned many of her traditional Greek recipes, and now I can share these recipes with you. Don’t get confused with the Greek word “kouzina” which means kitchen.

I just bought Back to My Roots but have not tried the recipes yet because there are so many on her website that I am trying! I made this super simple, Super Healthy Strawberry Almond Chia Seed Smoothie Recipe a few times and love it!

Benefits Of Chia Seeds:
  • Chia seeds deliver an enormous amount of nutrients.

  • Very low in calories.

  • Chia seeds are known to provide substantial amount of energy.

  • Chia seeds deliver a massive amount of nutrients.

Ingredients:

  • 1 1/2 cups (240 g) fresh strawberries

  • 1 tablespoon maple syrup

  • 1/2 – 3/4 cup (120-180 ml) unsweetened plain almond milk

  • 2 Tbsp chia seeds

  • Ice cubes

Directions:

  1. In a blender add all ingredients and blend for 60 seconds. (Or until all ingredients are blended.)

  2. Enjoy this lovely smoothie in the am.
